I’ve been making this epic cashew ‘cheese’ sauce for a while now. I feel like I’ve finally perfected the recipe! (yay!)
I’ve had quite a lot of people ask me for the recipe. So, I thought it was about time that I posted it on here for all to try.
This sauce is indulgent, creamy and full of flavour. I find it incredibly moreish. You do have to have some self control when it comes to this sauce. This recipe makes quite a bit of the stuff and I’ve been tempted to eat the entire batch in one sitting before!! Insert pig emoji here….
What can I use the sauce for?
What I love about this sauce, is how versatile it is. I’ve had it on toast, on crackers and in a beanie burger. It’s also great mixed into a tomato pasta sauce to mimic a creamy tomato and Mascarpone sauce. I have a recipe for that sauce here. I’ve even mixed it into potato mash to make it cheesey and creamy, which is super yummy!
Is the sauce healthy?
Not only is this sauce delicious but it’s also pretty nutritious too! It’s a source of healthy unsaturated fats along with vitamin A, calcium, iron and potassium. So without further ado, here is the recipe for my epic cashew ‘cheese’ sauce!
There are a fair few ingredients. You may need to pop to the shop to purchase a few things to make it. I advise you don’t skip the nutritional yeast as this is important for the cheesy flavour. I would also recommend buying cashews in bulk because it works out a lot cheaper. BuyholefoodsOnline is a great option for bulk buying wholefoods! I love their organic cashews.
Epic cashew ‘cheese’ sauce!
Ingredients
- 150 soaked unsalted cashews*
- 2tbsp apple cider vinegar
- 1tsp white miso paste
- 1tsp smoked paprika
- 1tsp turmeric powder or pure curcumin powder
- 100ml oat milk or other plant milk
- 2tbsp extra virgin olive oil
- 10g nutritional yeast
- salt and pepper to taste
Instructions
- Soak your cashews if you haven’t already.
- Then simply add all the ingredients to a high speed food processor and blend until smooth! It’s really as easy as that!
- Enjoy! (And try not to eat all of it in one go!)
Notes
*You can either soak the cashews the day before by placing them in cold water in a bowl in the fridge or you can place them in hot water for 1 hour before making the sauce. This will give a smooth consistency.
The nutritional values are for one whole batch of sauce.
The sauce will keep in the fridge for about a week and a half.
